Vegan Burrito Bowls
Lay a big fluffy flour tortilla in a bowl big enough for the amount of food you want to eat. Add to that: some rice (cilantro lime, or any other you prefer), beans, lettuce, tomato, onion, your protein of choice (tofu and tempeh are both good). Garnish this with veggie cheese and/or vegan sour cream if you’re into that sort of thing, or leave it off and let the flavors speak for themselves. Sweet Kickin Salsa finishes things off sweet and spicy.
Vegan Tortilla Soup
Heat oil in a large sauce pot over medium heat, add 1 diced onion and a couple chopped jalapeno peppers, cook until tender. Stir in 1 cup black beans, 1 cup pinto beans, 2 large diced tomatoes, ½ cup frozen corn, 1 carton veggie stock, 2 tbsp tomato paste, 2 tsp ground cumin, 1 tsp chili powder and heat to a rolling boil. Simmer for at least 5 minutes (the flavor will be better if you cook it for longer). Serve with crushed tortilla chips or strips, and Sweet Kickin Salsa.
Vegan Breakfast Burritos
Make tofu scramble.
Tofu Scramble: 8 oz extra firm tofu, vegan butter or oil (for frying), 2 tbsp nutritional yeast, 1/3 cup soy milk or nut milk, any seasonings you want. Mash the tofu up with the fork until it’s the texture of scrambled eggs. In a separate bowl, mix the soy milk, nutritional yeast, and seasonings to make a sauce. Fry the tofu in the pan until it’s browned, then fold in the sauce and cook until the tofu is as wet or dry as you want it.
Lay down a big flour tortilla, fill it up with tofu scramble and sautéed veg (peppers, mushrooms, zucchini, onions, they’re all good) and Sweet Kickin Salsa. Add some veggie cheese or cashew ricotta, wrap it up and call it breakfast.
Vegan Fajitas
Put oil in a large skillet, add green peppers, mushrooms, onion, zucchini, any other veg you like and cook until it’s tender-crisp. Add thin slices of extra firm tofu, tofu crumbles, tempeh, or any other protein you desire, and heat until cooked through. Throw in some beans for extra flavor. Add cumin, garlic, chili powder, a squeeze of lime and any other seasonings you like towards the end of the cook time. Serve this delicious sizzling skillet with a stack of corn tortillas, sliced avocado, veggie cheese, and Sweet Kickin Salsa for a low-key weeknight dinner that looks like a lot more effort than it is.
